10/1/2017 3 Comments A Twist on Pecan PieHello, and welcome back to my blog! This week I finally began baking, and I was so excited! Like stated in last weeks blog, this week (week two), I made German Chocolate Pecan Pie Muffins with a dollop of cream cheese icing. Originally, I planned on baking Paleo Pecan Pie Muffins. However, I decided to make german chocolate pecan pie muffins because after looking into the price of ingredients for the paleo muffins I decided it was going to be too expensive. Instead of regular flour and sugar, it called almond flour and coconut sugar. The almond flour alone was going to be a bit over $11 for a 16 oz bag, and the coconut sugar was going to be around $6 for a 16 oz bag. I knew I wasn’t going to be using the ingredients again, so there was no need to spend that much money on something I’d only use once. I wanted to still have some kind of twist on them that’s why I decided on German chocolate pecan pie muffins, rather than regular pecan pie muffins. Before baking, I went to the store and gathered all my ingredients. I didn’t have to get too terribly much because most things I already had. I was visiting my grandparents this weekend. Therefore, I had to bake at their house. When I started, I was in a rush and did not let my butter thaw to room temperature. Instead, I just heated it in the microwave. Normally, this works okay, but I melted it a little too much. Once I began blending it in with the other ingredients, it just did not look right. It was soupy and curdled looking. I had to throw it away and start again. This next time I decided to wait for the butter to thaw. That worked much better. The second time around I had no problems whatsoever. After I completed the muffins, I made some whipped cream cheese icing to put on top to add some pizzazz, rather than having plain muffins. I had never used heavy whipping cream before, which is what the recipe called for, so that was a new experience. It all worked out well though. I then took it to the 8th grade teachers at Ellis Middle School. They loved them and were very appreciative. While I was there, I maked sure to thank the staff for all they did to prepare me for high school. Below I have included the recipe I used in case you would like to try it. The muffins look really good, and it was very nice of you to give them to the staff! I think the idea for your project is very nice.
